I again apologize for taking a while to write especially when in the last article I wrote I mentioned the date I would write my next article.  I have now decided that I will not make such promises but will continue to write and share what I’m learning with you as time permits and/or the need arises because no matter what I do, there just isn’t enough time to do everything that I intend to do in a given day!  However, I am working on it.  Just be patient with me, I have a lot to share with you.


In my last article I mentioned that I was going to give you a list of food my family eats, but then I realized that the list would be extremely long and that I would probably have to explain most of the food we eat since it’s part of America’s common delicacy.  What I have decided, though is to introduce the food in my recipes whenever I give you a new recipe so keep an eye out for those recipes on this space.


One of the reasons I haven’t had time to write is that I have recently become involved in something really big, bigger than myself!  If you remember one of my previous articles, I asked that if anyone knew of a company that manufactured skin care products that had none of the harmful chemicals I mentioned  in my articles to please share that information with me.  My goal is to find means to help us all avoid chemicals and additives that we ingest in our food and those we absorb through our skin so as to maintain and improve our overall health. It took awhile, but someone found it and that someone is none other than my eldest daughter, Mary Edna. She is the one who appeared to be indifferent about my recommendations – being in the science field, she would question everything. So, when she came to us excited about this line of products, we had to listen.  The signature product from this company, a juice made from a little-known fruit from Asia, has improved our health by leaps and bounds.


As you know, I have a passion for “all things health”, hence the reason for this blog which I use to encourage others to make some lifestyle changes that could result in improved health. Even though I have tried the best I can to maintain healthy eating habits, I had started experiencing some new health challenges.  Yes, my health was much better than before but I started feeling the effects of old age, so to speak. These included hot flushes, fatigue, difficulty going up and down the stairs, hair loss, peeling and breaking nails, and back pain .  I knew that I should probably consult a physician about these health challenges but I was hesitant because I knew there was a possibility of being prescribed some kind of medication.  I know that there are times we have to use prescription medicines but there is also the problem associated with the harmful side effects of the very medicine that is supposed to be helping you (You know, the ones written in very small print that you may need a magnifying glass to read them).   I sought the advice of an Alternative Medicine Doctor who works with the company and in a short time after following his advice,  the hot flashes are gone, my energy is through the roof, I run up and down the stairs, my hair is starting to grow back again, my nails are not breaking or peeling any more, and the pain in my back had completely gone …that is until I got carried away (no pun intended) with my newfound strength and lifted a very heavy object.  I’m glad to say though that the pain has subsided and I just wonder to myself  what was I thinking at age 65 lifting such a heavy object?!

I have to apologize again for this long silence. Oh my goodness! I don’t know about you, but my time is running too fast. I guess I am having a lot of fun. Yes, I have been having fun this summer with birthdays (one to three each month from January to September), graduations, traveling to Italy etc. etc. Thanks to my good health – all glory goes to the Almighty God.

I am sure the title shocked some of you just as it did for me when I first learned about the dangers of wheat. Yes, wheat. When I wrote about how I had lost weight, I mentioned that I was using portion control, was eating more vegetables and less carbohydrates, while consuming protein in between. At that point, I didn’t realize I was actually reducing my WHEAT intake because, all my simple carbohydrates WERE 100% whole wheat. Like many people out there, I was sold on the idea that this was the healthiest grain on earth. All that changed when I read Dr. William Davis’ book Lose The Wheat Lose The Weight. This is one book that everyone who cares about his/her health should read. No, I am not getting a cut and he doesn’t know that I am un-officially marketing his book.

While people with celiac disease are affected by all products with gluten, you and I are susceptible to this modern wheat because of this new protein called GLIADIN. He calls this modern wheat a perfect chronic poison; and he claims to have cured many of his patients from all kinds of conditions just by having them eliminate wheat. So, what I did was to become again, a guinea pig for you. I eliminated all products that have wheat in them – it’s not as difficult as you think especially if you are used to cooking. Get this, without exercising and without portion control (already used to smaller meals) I lost about four more pounds, which brought me up to a total of twenty pounds that I had lost to date. To get to my original weight (148 lbs), I need to lose seven more lbs. At age 65 and 5’6″ tall, I am getting advice that I should not try to lose more. Well, I’ll see how that goes.

I still use other grains, such as rice (black is my favorite) not to be confused with wild rice. This black rice is sometimes called forbidden rice and it has short grains with great flavour, while wild rice has long grain, and includes grains such as millet, quinoa, tef and amaranth. For me and my family this list is enough so far. I use any fo these grains to make bread. I had tried to purchase wheat free/gluten free bread from stores but most of them don’t taste good and have some harmful ingredients in them such as tapioca, corn starch, potato starch, cottonseed etc. So, I decided to make my own bread – inspired by Dr. William Davis, using the ingredients I know for sure are not detrimental to my health (at the moment, anyway… Remember, these things keep on changing). My problem now is that all my children, grand children and friends want my bread. My children got me to blogging now they are asking me to write a recipe book.

My next article, right after this is the recipe I just mentioned above. Please come back and get the recipe and start eliminating wheat from your diet. I care that much. I must mention that some people get withdrawal symptoms from eliminating wheat because it is addictive. If this is the case, start with one meal at a time until you no longer feel the effect. For those who have no problem with yeast and who do not want to spend time in the kitchen baking I recommend this bread – by Berlin Natural Bakery. It’s made with non gmo ingredients: freshly stone-ground whole sprouted spelt flour, water, honey, yeast and sea salt. So far I have seen it at Whole Food and Roots Market – in freezer section. As promised, I am giving you this loaf recipe because I care that much. Although I was inspired by Dr. William Davis, many of the ingredients are quite different from his. But, before I give this recipe, I would like to take this opportunity to thank all my fans for the wonderful comments of encouragement you posted. It is impossible to respond to each individual as I have received so many kind comments since I started this blog. However, I will answer one that came in the form of a question. I was asked how long I had been blogging. The answer is that the first article on my blog was the first time I blogged. If you read my first article, you will understand that, it was my children who made me do it – so to speak. It is their turn to make me do things I am not ready to do, in other words, it is pay back time:-)

Okay, now, here is the recipe: This recipe is gluten free, wheat free, soy free and dairy free. The ingredients are very easy to find.

1 1/2 cups almond flour – preferably Trader Joes’, (whole, unrefined)
1 1/2 cups millet flour – preferably whole, unrefined (in Asian stores)
1/8 cup coconut sugar – preferably the one that says low glycemic index
2 tbsps arrowroot flour – found in most grocery stores
1 tsp cinnamon – ground
1/2 teaspoon sea salt – optional
1 cup bananas – mashed
2/3 cup water – filtered
1/4 cup coconut oil – organic virgin

1. Grease a 5×9 inch (or smaller) baking glass or ceramic dish with coconut oil (if it’s liquid, after greasing the dish,
put it in the fridge or freezer so the oil sticks on the dish) you need this to prevent loaf from sticking in the dish.

2. In a medium bowl, combine all dry ingredients and mix well.

3. In a smaller bowl, mash two medium bananas (should make a cup) and mix well with the other wet ingredients.

4. Pour all wet ingredients into the dry ones and mix well with wooden spatula or spoon.

5. Pour batter into prepared dish and bake for 55 to 60 minutes in the center of a preheated oven at 335 degrees.
The loaf is ready if toothpick inserted in center comes out clean.

6. Cool for 2-5 minutes and run a spatula gently around top rim of dish. Invert a plate on top of dish, flip over
and let loaf gently onto the plate. Let it cool for at least one hour and enjoy with your favorite organic butter, cheese or alone.

Here, now is the list of harmful ingredients you should look out for when purchasing processed food:

Aspartame, Autolyzed Proteins, BPA (Bisphenol-A, Casein – Milk proteins, (used in soy cheese), Corn Syrup/High Fructose Syrup, FD&C Red #40, Homogenized Milk, Hydrochloride, Pyridoxine Hydrochloride or Thiamin Hydrochloride, Hydrolyzed Vegetable Protein, Partially Hydrogenated Oils, Phosphoric Acid, Propylene Glycol, Sodium (dead salt), Sodium Nitrite, Soy Protein, Sucralose (sold as Splenda), Sugar (white/bleached), Textured Vegetable Protein (genetically modified soybeans processed with hexane), Yeast Extract (hidden form of MSG), niacinamide and cyanocobalamin (synthetic vitamin B-12).  Genetically Modified Ingredients – not currently listed on the label because the GMO industry (Monsanto and DuPont) absolutely  does not want people to know which foods contain GMOs.  Nearly all conventionally grown corn, soy and cotton are GMOs.  They’re linked to severe infertility problems and may even cause the bacteria  in your body to produce and release a pesticide in your own gut.  If you’re not eating organic corn, you’re definitely eating GMO corn.  Some of the diseases that are caused by these harmful ingredients are: cancer, neurological disorders, seizures, blurred vision, migraine headaches, infertility, hormone disorders, diabetes, obesity, mood disorders, high blood pressure, heart disease just to name a few.  Please visit this link

My hope is that if enough people read the ingredients and dump those packages that have those harmful ingredients, the food industry will be forced to produce healthier food.  Meanwhile, we might have to do some cooking ourselves.

As I promised, here is the information on the safer products that I personally use and my household:

Toothpaste: Coral White Tea Tree from / 800 992 9577 or from your local health store.
Deodorant: Thai Crystal deodorant stone, from / 480 451 4981 or from your local health store.
Skin: 100% organic Shea butter, you can add drops of Almond oil to soften it to your liking. You can get this from Beauty Supply stores.
Shower/bath: Oatmeal & Honey soap (2 bars in a plastic package) under $2, from Trader Joe or find something similar from your local store.
Shampoo:  See the above (Oatmeal &Honey soap).  Yes, and it works for me, just like the old days.  I hope it works for you.
Hair dressing:  Almond oil.  Some people use Coconut oil and Olive oil.
As you can see, I don’t go for name brand name products because when it comes to ingredients, they have the same harmful ingredients.  The rule of the thumb is the fewer the ingredients the better.  If I pick up a product and see a lot of ingredients listed, I don’t bother reading.  With the above products, I spend less than $40 a month , excluding the deodorant.  The deodorant is about $15 and it lasts more than a year and you use it once a day!
With the list of the harmful ingredients posted in my previous article, you can take that list and check whatever you want to purchase to see if those ingredients are not present.  However, keep in mind that there are new chemicals introduced almost everyday.  I will do my best to let you know about them as I get aware of them.  I have yet to find safe cosmetics, thus the reason I rarely use them.  If anyone knows any source of safe cosmetics, please let me know so we can share it with others.

In my very first article, I mentioned how I threw away all my non-stick cookware. I replaced them with stainless steel, ceramic,glass and stoneware.  With these, my worry about chemicals from scratches leaching in my food or buying new cookware from time to time, is completely gone.  It may cost much more money initially to buy stainless steel or ceramic cookware, but they last for years and save money and life – in the long run.  I have seen some other types of cookware on the market since, like cast iron or ceramic non-stick but I haven’t used them and I don’t know how good they are.
